The Language of Flavour

Tony Hoyle, British Chocolate Master 2004

I have a preference for Madagascan chocolates and the new origin chocolates from Malagasy are a welcome addition. The Mora Mora is smooth and creamy and quite a mellow flavour for such a high cocoa content, with a subtle fruit flavour usual to Madagascan cocoa. The Sambriano has an earthy, woody flavour probably due to the fermentation, and short length of time from tree to manufacture of the chocolate. The fact that the chocolates are Equitrade is a great plus to ending the poverty in Madagascar.
